Instructions:

1. In a pressure cooker or a large pot, add the soaked and drained lobia along with enough water to cover it. Cook until the lobia becomes tender. If using a pressure cooker, cook for about 3-4 whistles, or if using a pot, simmer for 45 minutes to 1 hour until the lobia is soft. Drain and set aside.


2. In a large pan or skillet, heat oil over medium heat. Add cumin seeds and let them splutter.


3. Add chopped onions and sauté until they become golden brown.


4. Add ginger-garlic paste and green chili (if using). Sauté for a minute until the raw smell disappears.


5. Add chopped tomatoes and cook until they turn mushy and the oil starts to separate from the mixture.


6. Reduce the heat to low and add turmeric powder, red chili powder, coriander powder, and salt. Stir well to combine the spices with the tomato-onion mixture. Cook for a couple of minutes to allow the flavors to blend.


7. Add the cooked lobia to the pan and mix well with the spice mixture. Adjust the consistency by adding water if needed.


8. Cover the pan and let the lobia simmer on low heat for about 15-20 minutes, allowing the flavors to meld together.


9. Stir in garam masala powder and cook for an additional 2 minutes.


10. Garnish with chopped cilantro leaves.
