Escalivada (Spain dish) & It's benefit

Instructions:

1. Preheat your oven to 400°F (200°C).


2. Wash the vegetables. Cut the bell peppers in half and remove the seeds and stems. Cut the eggplants in half lengthwise. Peel the onions and cut them in half. Leave the tomatoes and garlic cloves whole.


3. Place the vegetables on a baking sheet lined with parchment paper. Drizzle them generously with olive oil, making sure to coat them well. Season with salt and pepper to taste.


4. Roast the vegetables in the preheated oven for about 45 minutes to 1 hour, or until they are tender and slightly charred. Check on them occasionally and turn them over if necessary to ensure even cooking.

6. Peel the skin off the bell peppers and tomatoes. The skin should come off easily after roasting. Remove the charred outer skin from the eggplants as well.


7. Cut the vegetables into thin strips or bite-sized pieces and place them in a bowl. Squeeze the roasted garlic cloves out of their skins and add them to the bowl.


8. Drizzle some more olive oil over the vegetables and gently toss them together to combine. Season with additional salt and pepper if needed.


9. Let the escalivada sit at room temperature for about 30 minutes to allow the flavors to meld together.


10. Serve the escalivada as a side dish or as a topping for crusty bread. It can also be enjoyed as part of a salad or as a filling for sandwiches.
