Ingredients:

- 1 kg ripe tomatoes

- 1 onion, finely chopped

- 2 cloves of garlic, minced

- 2 tablespoons olive oil

- 1 teaspoon dried thyme

Instructions:


1. Start by preparing the tomatoes. Bring a pot of water to a boil and make a small "X" incision on the bottom of each tomato. This will make it easier to peel the skin off later. Carefully drop the tomatoes into the boiling water and let them cook for about 1 minute. Remove them using a slotted spoon and transfer to a bowl of ice water to cool down. Once cooled, peel off the skins and roughly chop the tomatoes.


2. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant, about 5 minutes.


3. Stir in the tomato paste and cook for an additional minute to enhance the flavor.


4. Add the chopped tomatoes to the pot and cook for about 5 minutes, stirring occasionally.

8. Place the pot back on the stove over low heat to warm the soup again. Taste and adjust the seasoning if needed.


9. Serve the tomato soup hot, garnished with fresh basil leaves if desired.
