INDIAN DISH KHADI PAKORA & It's benefit

For Pakoras:

- 1 cup gram flour (besan)

- 1/2 teaspoon ginger paste

- 1/4 teaspoon turmeric powder

- 1/2 teaspoon coriander powder

- Salt to taste

- Water (as needed)

- Oil for deep frying


For Khadi:

- 2 cups plain yogurt

- 3 tablespoons gram flour (besan)

- 2 cups water

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- 1/2 teaspoon cumin seeds

- A pinch of asafoetida (hing)

- 1 tablespoon oil

- Salt to taste


For Tempering/Tadka:

- 1 tablespoon ghee or oil

- 1/2 teaspoon cumin seeds

- 1/2 teaspoon mustard seeds

- 1 dried red chili

- A few curry leaves (optional)

- 1/4 teaspoon fenugreek seeds (optional)


For Garnish:

- Fresh coriander leaves, chopped


Now, let's move on to the recipe:


1. In a mixing bowl, combine the gram flour, finely chopped onions, green chili, ginger paste, red chili powder, turmeric powder, coriander powder, and salt. Mix well.

2. Gradually add water to the mixture and whisk until you have a smooth batter. The consistency should be thick enough to form pakoras but not too runny.

3. Heat oil in a deep pan or kadai for deep frying. Once the oil is hot, drop small portions of the batter using a spoon or your hands. Fry the pakoras on medium heat until they turn golden brown and crispy. Remove them from the oil and place them on a paper towel to absorb excess oil. Set them aside.

4. In a separate bowl, whisk the yogurt until smooth. Add the gram flour, turmeric powder, red chili powder, and salt. Mix well to ensure there are no lumps.

5. Heat oil in a deep pan or kadai. Add cumin seeds and let them splutter. Then add asafoetida and stir for a few seconds.

6. Pour the yogurt mixture into the pan, stirring continuously to prevent lumps from forming. Add water and stir again.

7. Cook the khadi on medium-low heat for about 15-20 minutes, stirring occasionally, until it thickens and the raw taste of the gram flour disappears. Adjust the consistency by adding more water if needed. Make sure to keep stirring to prevent the mixture from sticking to the bottom of the pan.

8. In a small pan, heat ghee or oil for tempering. Add cumin seeds, mustard seeds, dried red chili, curry leaves, and fenugreek seeds (if using). Let them splutter and release their flavors.

9. Pour the tempering over the cooked khadi and mix well.

10. Finally, add the prepared pakoras to the khadi and let them simmer for a few minutes, allowing the flavors to blend together.

11. Garnish with fresh coriander leaves.

12. Serve hot with steamed rice or roti.
