Ingredients:
- 250 grams paneer (Indian cottage cheese), cut into cubes
- 1 onion, finely chopped
- 1 capsicum (bell pepper), thinly sliced
- 2-3 green chilies, slit lengthwise
- 3-4 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon tomato ketchup
- 1 tablespoon chili sauce
- 1 tablespoon vinegar
- 1 tablespoon cornstarch
- 1/2 teaspoon black pepper powder
- Salt to taste
- 2 tablespoons vegetable oil
- Fresh coriander leaves for garnishing
Instructions:
1. In a small bowl, mix together soy sauce, tomato ketchup, chili sauce, vinegar, cornstarch, black pepper powder, and a pinch of salt. Set aside.
2. Heat 1 tablespoon of oil in a pan over medium-high heat. Add the paneer cubes and fry them until they turn golden brown from all sides. Remove the paneer from the pan and set aside.
3. In the same pan, add the remaining 1 tablespoon of oil. Add minced garlic, grated ginger, and slit green chilies. Sauté for a minute until the garlic turns golden.
4. Add the chopped onions and sliced capsicum to the pan. Stir-fry for 2-3 minutes until they become slightly tender, while still maintaining their crunch.
5. Add the prepared sauce mixture to the pan and mix well with the vegetables. Cook for a minute until the sauce thickens and coats the vegetables evenly.
6. Add the fried paneer cubes to the pan and gently toss them with the sauce and vegetables. Cook for another minute to let the flavors combine. Adjust salt if needed.
7. Remove from heat and garnish with fresh coriander leaves.
8. Serve the dry chili paneer hot as an appetizer or as a side dish with fried rice or noodles.
