Chhole (also known as Chana Masala), a popular North Indian dish made with chickpeas:
Ingredients:
- 2 cups chickpeas (also known as garbanzo beans), soaked overnight and drained
- 2 medium-sized onions, finely chopped
- 3 medium-sized tomatoes, pureed
- 2-3 green chilies, slit lengthwise
- 4-5 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 teaspoons cumin seeds
- 2 teaspoons coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust according to your spice preference)
- 1 teaspoon garam masala
- 1 teaspoon dry mango powder (amchur)
- 2 tablespoons oil or ghee (clarified butter)
- Salt to taste
- Fresh cilantro (coriander) leaves for garnishing
- Lemon wedges for serving
For the spice bag (optional):
- 2-3 black cardamom pods
- 2-3 cloves
- 1-inch cinnamon stick
- 1 teaspoon black peppercorns
Instructions:
1. Heat oil or ghee in a large pan or pressure cooker over medium heat. Add the cumin seeds and let them splutter.
2. Add the finely chopped onions and sauté until they turn golden brown.
3. Add the minced garlic and grated ginger. Sauté for a minute until the raw smell disappears.
4. Add the pureed tomatoes and green chilies. Cook for about 5 minutes until the oil separates from the mixture.
5. Add the spice bag (black cardamom pods, cloves, cinnamon stick, black peppercorns). This step is optional, but it adds extra flavor to the dish.
6. Add the coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a minute.
7. Add the soaked and drained chickpeas to the pan or pressure cooker. Stir well, ensuring that the chickpeas are coated with the spice mixture.
8. If using a pressure cooker, add enough water to cover the chickpeas (about 3-4 cups). Close the lid and cook for about 15-20 minutes, or until the chickpeas are tender. If using a pan, add about 2 cups of water, cover, and simmer for 45-60 minutes or until the chickpeas are soft.
9. Once the chickpeas are cooked, remove the spice bag (if used) and add garam masala and dry mango powder (amchur). Stir well and simmer for another 5 minutes.
10. Garnish with freshly chopped cilantro leaves.
11. Serve hot with naan, roti, or rice. You can also squeeze some fresh lemon juice over the chhole before serving for added tanging.
